For this upgraded Course Menu, we use Specialty Local Oki beef as the main in this plan.
Depending on the season, we will incorporate a plentiful variety of high-quality seafood such as abalone, Iwagaki rock oysters, Shimane Prefecture local caviar, as well as sea urchins.

This menu, assembled exclusively for guests on that particular day, is created on the spot and is tailored to things such as the weather conditions that day, the seasonal produce, as well as the atmosphere and other details from the conversations you may have with the chef.

We invite you to taste the flavours that make Shinyashiki what it truly is; local gastronomy combining local island ingredients with Italian cuisine.

After dinner, enjoy relaxing outside as we finish preparing the wood fire. On a clear night, enjoy sprawling out on our reclining chairs and gazing up at the stars to your heart’s content, as if the sky is your own planetarium.

Check-in is available from earlier times, so please enjoy a leisurely stay.

■In order to ensure you have a comfortable stay, we have provided the following amenities:
-A bookshelf containing a selection of literature
-A collection of yoga mats featuring a body-length mirror to aid in your workout
-Large-sized projector capable of producing both photo and video display
-In the garden, we have an open-air fire pit for gathering around together with your loved ones

■Outdoor Tuscan-style Garden
Our garden features a Tuscan style, combining the traditional stone architecture of Italy’s Tuscany region with the local island landscape.
We invite you to enjoy our outdoor garden through experiencing a bonfire by the fireplace as well as stargazing from our reclining chairs.

■Information regarding the wine cellar
The wine cellar is installed in the living room, containing a selection of over 50 different wines available for your convenience.
Choose from the variety of wines, from time-honored traditional single-vinyard wines to gentle, natural wines crafted with care. They are available to purchase at any time during the course of your stay.

■Wine pairing:
For dinner, the chef who is the sommelier, can provide wine pairings best suited to your courses. They will tailor the wine pairing experience based on your preferences, so please insure to let them know of them in advance.
